EASY TO COOK RECIPES (dedicated to Divya & Ayshu)


Dum Aloo
Ingredients:
  • 8 small round potatoes
  • 2 onions
  • 2 tbsp garlic-ginger paste
  • 1 tsp coriander powder
  • 1 tsp cumin seed powder
  • ½  spoon garam masala powder
  • 2 tbsp coconut
  • Oil for frying
  • A small bunch of coriander leaves
  • Salt

Method:
  • Boil the potatoes. Peal and fry them whole. Do not over boil.
  • Prick the potatoes with fork, so that it can absorb the masala.
  • Make thick gravy by frying the onions, garlic, ginger, cumin and coriander powder and coconut. Mix together.
  • Add the potatoes and salt and let it cook for few minutes in the gravy.
  • Sprinkle coriander leaves and serve hot.

Stuffed Capsicum
Ingredients:
  • 4 medium sized capsicums
  • 4  boiled potatoes
  • ½ cup fresh or tinned corn
  • 2 medium size onions (minced)
  • 3-4 garlic flakes
  • Small piece ginger
  • 3 chopped  chilies
  • Salt and chili powder to taste
  • Small bunch of coriander leaves
  • 1tsp turmeric powder
  • 1tsp  garam masala
  • 150gms cottage cheese
  • Oil

Method:
  • Wash and cut the capsicums in halves. Scoop the capsicum. Apply little salt inside the capsicum.  
  • Mash the potatoes and boil the corn until tender
  • Drain the water and mix it together.
  • Crush the garlic, ginger, chilies & salt.
  • Slightly fry the onions in little oil until it turns into light golden brown.
  • Add the spice paste with potato, corn mix and half of the cottage cheese. Mix well.
  • Stuff the mixed ingredient in the capsicum and sprinkle cheese on the top of it.
  • Keep it for baking in a moderate heat for about 20-25minutes, until the topping is brown.
  • Serve with  tomatoes

Baked Pasta with Cauliflower
Ingredients:
  • 1 cup of pasta
  • 1 small whole cauliflower
  • 2 onions
  • Half inch ginger
  • 4-5 flakes of garlic
  • 2 tbsp of Tomato ketchup
  • 2 tsp pepper powder (according to your taste)
  • Fine  herbs 1tsp ( you get it is super market)
  • Baking tray

Method:
  • Boil the corn adding 1tsp of oil and salt (to avoid sticking). Drain and keep aside.
  • In a big bowl add some salt and keep the whole cauliflower for few minutes (let it stand for 5-6minutes) Drain it out and cut into small pieces.
  • Take a kadai/ pan heat 1 tbsp oil
  • Add onions and sauté it for few minutes
  • Add rest of the above ingredients followed by tomato ketchup & fine herbs. Your masala mix is ready
  • Take a baking dish, sprinkle cheese and put layer of boiled pasta mixed with cauliflower.
  • Add the prepared masala mix with one more layer of pasta over it. 
  • Sprinkle cheese lavishly on the top
  • Garnish with sliced tomatoes and long strips of capsicum
  • Keep it for baking in a moderate heat for about 20-25minutes, until the topping is brown.
  • Serve hot.
