Amchi-gele Recipes

Content:
  1. Sweet & Instant Appoo’s
  2. Fruit Sassame
  3. Baby Jackfruit (green) & Channa Sukke
  4. Daali-toye (Mangalore GSB Dal)
  5. Potatoes in whole red chilies
  6. Amshe Teekshe (with Lady’s finger or bitter gourd)
  7. Cabbage vada



Sweet & Instant Appoo’s


Ingredients
·        1 Cup wheat flour
·        2 marble size of jaggery
·        7-8 powdered cardamom
·        1 ripped banana (smashed)
·        One pinch cooking soda
·        Ghee for frying
·        Salt for taste

Method
  • Make a paste of flour, jaggery, mashed banana, soda and cardamom adding 1 cup water. The batter should not be very thin just to a pouring consistency.
  • Keep it for 5 minutes.
  • Take an Appoo’s pan, pour ghee and fry the Appoo’s to a golden brown colour.
  • If you do not have a pan, then deep fry the Appoo’s.



Fruit Sassame

Ingredients
  • 1 ½  Pineapple         
  • 2  Sweet n Sour  Mangoes (peel  skin)
  • 100 gms of fresh black grapes
  • 1 cup Coconut grated
  • 3  dry chilies
  • 2 marble pieces of jaggery
  • 1 tsp mustard seed
  • Salt to taste

Method
  • Grind coconut, dry chilies and jaggery together.
  • Add salt and half cup of water.
  • Fry mustard seed in a tsp of ghee, when it splutters mix with masala and grind for a minute.
  • Add pineapple, mango pieces and grapes.  Mix together.
  • Keep it in a refrigerator for half an hour before the serving.



Baby Jackfruit (green) & Channa Sukke

Ingredients (A)
  • Red Channa 1 cup  (soaked overnight)  
  • Skin- off the baby jackfruit (2 cups) and cut into ½ inch pieces, boiled with salt.
  • Grated Coconut 1 cup
  • Salt  to  taste

Ingredients for Grinding (B)
  • Long   dry chilies   5-6
  • Coriander  seeds  1  tbsp
  • Urad dal   2  tsp
  • Tamarind  ½  marble size

Method
  • Fry the ingredients (A)  with little oil separately  
  • Urad dal  should  be slightly  brownish  in colour
  • Grind   chilies, coriander seed, coconut and tamarind.   Add half cup water. Do not make a very fine paste.
  • Before removing add fried Urad dal.  Grind for  1-2 minutes  
  • Mix masala with boiled Channa & baby   jackfruit pieces.   Bring it to boil.
  • Season with mustard and curry leaves.



Daali-toye (Mangalore GSB Dal)



Ingredient
  • Tuvar  dal   ½ cup
  • Water  1 ½ cups
  • Green  chilies   4-5
  • Ginger   ½ an inch
  • Hing one pinch (asafetida)
  • Salt

Method
  • Wash and soak the dal in 1 ½ cups of water for 15minutes.  
  • Slit green chilies, crush ginger and keep it in a pressure cooker for 10 -15 minutes.
  • After it is boiled, transfer the dal in to kadai adds ½ tsp of turmeric powder and salt to taste. Bring it to boil for 5-6minutes.

Garnishing
  • 2 tbs of ghee
  • 2-3 dry chilies broken into 2 pieces
  • 3 curry leaves
  • Hing
Use ghee for garnishing.  Add mustard seed, curry leaves, dry chilies and Hing and stir the cooked well. It should be semi thick consistency. Sprinkle with coriander leaves (optional)



Potatoes in whole Red Chilies

Ingredients
  • ¼ kg Potatoes
  • 6 -7  whole red chilies
  • A  pinch of Hing  powder
  • ½  tsp  Mustard seed 1/4tsp
  • 4-5  Curry leaves
  • 5 tbs of  Oil   
  • Salt to  taste

Method (this dish is generally prepared in oil)
  • Wash, cut  and cube the  potatoes into thinly square pieces 
  • Add ½ cup water and 1tsp of salt and soak the sliced potatoes for few minutes
  • Add 3-4 tbsp of oil in a deep pan and put mustard seed for seasoning. when it crackles, add curry leaves, broken red chilies, Hing powder
  • Squeeze the   potatoes from the salted water and fry the potatoes   adding little salt in a very low flame.   Sprinkle little water if necessary.
  • Goes well with white rice and dal



Amshe Teekshe (with Lady’s Finger or Bitter Gourd)

Ingredients
  • ¼ kg   Lady’s finger slit into 1 inch pieces
  • 1 lime size tamarind (soaked in 1 cup of water)
  • 1 big lime size jaggery
  • 2 tbs oil
  • Salt to taste

For Grinding
  • 7- 8 long dry chilies
  • 1 tbs Urad dal
  • ½ tsp methi seed (fenugreek)

Method
  • Fry chilies & Urad dal (light brown color) and methi seed (brown color)
  • Powder all the ingredients and keep aside
  • Heat oil, add lady’s finger and fry with salt till it changes its colour
  • Cover and cook in a very low flame 
  • Boil soaked tamarind juice and jaggery
  • Add the tamarind, jaggery and the prepared masala. Let it cook till the Lady’s finger is done.
  • Garnish with mustard seed and curry leaves. 
  • If bitter gourd is used, then cut and apply salt and turmeric powder and keep it for sometime



Cabbage Vada
Ingredients
·        1 cup cabbage (minced)
·        2   big onions    (minced)
·        7-8 red chilies
·        small lime size tamarind
·        3 desert spoon grated coconut
·        ¼ cup Tuvar dal
·        ½ cup rice
·        3 curry leaves
·        Salt to taste

Method
·        Soak rice and Tuvar dal for 1 hour.
·        Wash it and grind with dry chilies, tamarind, Channa dal and rice
·        Do not to add water while grinding (very coarsely)
·        Mix minced cabbage with the grounded masala and mix it with grated coconut, salt and onions.
·        Keep oil in a deep pan
·        Take a lime size of mixed masala. Slightly flatter it and deep fry into a light golden brown.

Diwali – the festival of lights is one of the most prominent festivals among the Hindus.Diwali is celebrated for 5 days in a row and one of the auspicious days is celebrated as Laxmi Pooja. And in order to bestow our lives with the goddess divine blessings, we decorate our homes with colors and lights.

Tips of Diwali decorations

Rangoli is a tradition in India and and involving a lot of fun creativity and handwork especially for me.



Diwali means light and festivity ,so do up the living room is bright,cheery colors like red,orange,pink and yellow.This also enhances the space by making it look bigger.Use glossy,shiny fabric for your cushion covers and curtains.This will automatically feflect the glow of the diyas and candles and lights make your room look warm.

Corners that feel empty can be decorated with small rangolis and flowers.

Experiment with diyas, traditional ones look great,but try using a variety,such as hanging diyas decorative candles.A white tube-light is stark and kills the festivity ambiance.Once again experiment with bulbs,chandeliers and lampshades.Focus on lighting up separate sitting spaces to get together.
Traditional diyas have a special significance in quiet a few household.
Use  a traditional Diwali decorative to adore your entrance doors.
Put up doos hanging embellished with embroidery,mirrors and bells.







Also place  earthen diyas on the floor and illuminate your facade.

Hanging bell outside your door  and let your guests have some fun.
A new upholstery and curtains may not be necessary,just hunt in your wardrobe for an old jari sari or colorful duppattas and hung them as decorative curtains.The traditional silk sarees or that matter bright plain chiffon sarees can be good options.







Duppattas over the tables and also a nice silk dark colored Stoll on the sofa would create the festive atmosphere.  

  Fireworks
 Fireworks symbolize festivity I missed it very badly in UAE rather than custom or tradition on Dewali.The use of crackers on Dewali in an expression of celebration and another way to spreading light over the  darkness  (night) Although burning of crackers has been popular activity of the festival among st all age groups.



  • Gift wrapping ideas
Exchanging gifts and sweets during diwali could also be very exciting.  Getting your kids involved will make them look forward for this festival.
·         Try making your signature sweet box. Keep a Diya along with sweet box or any other small brass or candles artifact.
·         Using Colored glass wrappers with thick ribbons adds on.
·         Sticking cloth like bandini prints, mirror work, applic/ patch work or satin over sweet boxes also makes it look attractive.
·         A surprise gift for your husband and kids is always precious.
·         Making the Gift wrap’s take the shape of a Diya or a fire cracker would be innovative.

Set your personalized dressing style for this festival. Buying new clothes may not be necessary.
  • A latest and trendy contrast colored choli for an old heavy sari would save the purpose.
  • An old ghagra with a choli of any sari can be mixed matched with a beautiful duppatta giving you the look of a Rajasthani princess.
  • Hair can be accessorized with jewelery or golden colored artificial flowers.
  • Henna or Mehendi designs on your palm will make you groove into festival aura.
Beauty care

Fresh supple looking skin 

A quick beauty treatment at home is always a yess!!!
 To creat the appearance of beautifying skin you all need -

Ripe banana 1
 Honey 3tbs
 Sandalwood powder 2tbs

This will make  paste that can be applied to the face.This glowing skin facial mask works as a deep cleanser to moisten dry skin and give a radiant glow.

For Wrinkled Skin to Smooth-

To smooth out fine lines and wrinkles on the face,you will need almond and milk and leaving the glass to sit out overnight.

Next, take the almonds out same milk and remove the brown skin.

Grind the soaked almonds and add them to a small amount of the same milk to form a paste.

The milk is beneficial to the face as it naturally cleanse pores to leave your face feeling fresh and clean.

Almonds contain vitamin A which moisturize the skin.

Nail every night rub some olive oil and gently push cuticles.

Soft Beautiful Hands 
1tsp sugar granuals
1tbs coconut milk

Apply this in your hands,scrub it for few minutes  and apply few drops of lime juice and olive oil and leave it overnight.

Glossy Strong Hair

1 tbs of lime juice
2 egg whites
Apply it to your hair after keeping it for 30minutes.
Wash with good shampoo and conditioner.
Drink minimum 8-10 glasses of water regularly.


A special sweet recipe

Though most of the sweets nowadays are purchased from out. Do make it a point to make at least one special sweet at home. 
The recipe of one of our favourite family sweet is given below. Most of my family & friends wait for this annual
 home- made fare :D  

who wants to try hands in making sweet! 

It will be ready in a jiffy,with the simple ingredients,but taste 

will be great,soft they just melts in your mouth.....

All purpose flour burfi is really easy to make,especially for 

beginners.


Ingredients

All purpose flour 1/2k.g
sugar   1 cup
Ghee 1/3 cup
vanilla essence 3-4drops
 nuts  6-8 nos
 water to make syrup
Saffron 1 pinch (dissolve in 2tsp of water)

 Method

In a pan heat all the ghee and fry cashew  nuts to golden brown and then add  slowly flour and fry in a low flame till the flour gets fried evenly.

In a heavy bottom pan  heat the sugar with little water to immerse the sugar,to one string consistency. (if you pour the syrup in little cold water it should form one string consistency) Now add the saffron mix water and put off the flame.

Remove from the stove and add the fried maida and keep on string.

Observe when the mixture gets thickened spread in a plate spread evenly in the greased plate.The surface should be smoothand leveled.

After it gets cooled down,still warm , grease the knife and cut into desired shapes.After it completely cools down transfer the burfi into another plate and tap gently.

Your burfy is ready..tastes great just melts in the mouth:)

EASY TO COOK RECIPES (dedicated to Divya & Ayshu)


Dum Aloo
Ingredients:
  • 8 small round potatoes
  • 2 onions
  • 2 tbsp garlic-ginger paste
  • 1 tsp coriander powder
  • 1 tsp cumin seed powder
  • ½  spoon garam masala powder
  • 2 tbsp coconut
  • Oil for frying
  • A small bunch of coriander leaves
  • Salt

Method:
  • Boil the potatoes. Peal and fry them whole. Do not over boil.
  • Prick the potatoes with fork, so that it can absorb the masala.
  • Make thick gravy by frying the onions, garlic, ginger, cumin and coriander powder and coconut. Mix together.
  • Add the potatoes and salt and let it cook for few minutes in the gravy.
  • Sprinkle coriander leaves and serve hot.

Stuffed Capsicum
Ingredients:
  • 4 medium sized capsicums
  • 4  boiled potatoes
  • ½ cup fresh or tinned corn
  • 2 medium size onions (minced)
  • 3-4 garlic flakes
  • Small piece ginger
  • 3 chopped  chilies
  • Salt and chili powder to taste
  • Small bunch of coriander leaves
  • 1tsp turmeric powder
  • 1tsp  garam masala
  • 150gms cottage cheese
  • Oil

Method:
  • Wash and cut the capsicums in halves. Scoop the capsicum. Apply little salt inside the capsicum.  
  • Mash the potatoes and boil the corn until tender
  • Drain the water and mix it together.
  • Crush the garlic, ginger, chilies & salt.
  • Slightly fry the onions in little oil until it turns into light golden brown.
  • Add the spice paste with potato, corn mix and half of the cottage cheese. Mix well.
  • Stuff the mixed ingredient in the capsicum and sprinkle cheese on the top of it.
  • Keep it for baking in a moderate heat for about 20-25minutes, until the topping is brown.
  • Serve with  tomatoes

Baked Pasta with Cauliflower
Ingredients:
  • 1 cup of pasta
  • 1 small whole cauliflower
  • 2 onions
  • Half inch ginger
  • 4-5 flakes of garlic
  • 2 tbsp of Tomato ketchup
  • 2 tsp pepper powder (according to your taste)
  • Fine  herbs 1tsp ( you get it is super market)
  • Baking tray

Method:
  • Boil the corn adding 1tsp of oil and salt (to avoid sticking). Drain and keep aside.
  • In a big bowl add some salt and keep the whole cauliflower for few minutes (let it stand for 5-6minutes) Drain it out and cut into small pieces.
  • Take a kadai/ pan heat 1 tbsp oil
  • Add onions and sauté it for few minutes
  • Add rest of the above ingredients followed by tomato ketchup & fine herbs. Your masala mix is ready
  • Take a baking dish, sprinkle cheese and put layer of boiled pasta mixed with cauliflower.
  • Add the prepared masala mix with one more layer of pasta over it. 
  • Sprinkle cheese lavishly on the top
  • Garnish with sliced tomatoes and long strips of capsicum
  • Keep it for baking in a moderate heat for about 20-25minutes, until the topping is brown.
  • Serve hot.

Motherhood


Motherhood is a very lovely feeling. The memories of it can be cherished forever. These are the earliest memories which a child doesn’t know, but would keep on asking you for details as they grow. It is really amazing as a mother to see the same excitement they show on their faces all the time even as they did as a baby or even now as grown-ups.

Few tips, precautions & advice for mothers-to-be. 

Healthy eating




Rice, bread cereals, fresh vegetables, milk, yogurt or cheese, meat, poultry, fish, dry beans, eggs or nuts and 8 x glasses of water is a must.

A brief Checklist for pregnant women
·         Take a good look at your lifestyle and health
·         Eat well balanced diet
·         Intake of folic acid supplements (citrus fruits/ juices etc)
·         Avoid caffeine
·         Talk to your doctor about how much weight you should gain during pregnancy
·         Eat foods which are rich in iron, calcium and protein
·         Do not skip your breakfast
·         Drink plenty of water to avoid constipation
·         20- 30 minutes of walk (at least 4-5 times a week) is a must

What to wear




  • This is one of the most beautiful and exciting thing in a women’s life, so make sure your pregnancy clothes are right and you look GREAT.
  • Wear comfortable front hook/ zip clothing. Today there is a wide variety of fashionable & beautiful wears for pregnant women in the market. Pick your clothes that make you look beautiful & feel easy. Maternity jeans are versatile & comfortable. You can use them after the delivery too.
  • The clothes should be light weight, adjustable and absorbent.
  • Foot wear should be comfortable and well fitting and easy to wear. If you prefer high heels, go for platform shoes with ankle fitting for better grip.
  • Hair grows faster during pregnancy, so try to trim your hair.
  • A well fitting supporting bra should be worn.

The first thing to do when you get up in the morning:
  • Totally relax
  • Close your eyes
  • Fold both of your legs   
  • Do  some breathing exercise for  at least  8-10 times
  • This breathing exercise really helps you during pregnancy & later.
Almost all pregnant women have sleep problems & sleeping irregularities.
Anxiety and stress levels too rise as the date approaches.
Other frequent problems could be backache, gas, frequent urination, congestion, heartburn, leg cramps and nausea.

A few important tips
  • Take a warm shower at bedtime be careful not to slip of in the bathroom.
  • Relaxation
  • Deep breathing (I am repeating it)
  • Sleeping continuously on your back for a longer period can increase your chances of getting backaches
  • Try to sleep from your side
  • Use more pillows to support your back and abdomen
  • Make your room comfortable
  • Don’t watch television or read in bed
  • Use your bed only for sleeping
  • Go to bed when you are tired and sleepy
  • Drink adequate fluid earlier during the day and not in the late evenings to avoid waking up in the night.
  • To prevent leg cramps stretch your leg muscle before bedtime
  • If a pregnant woman is diabetic, then tight control of blood sugar is a must to avoid complications for the baby or during pregnancy

Few more tips:
  • Consider travelling by air for long trips to conserve energy & time
  • Don’t forget to wear seatbelts during a drive
  • Moderate exercise, even yoga is recommended
  • Keep you mind calm and happy
  • Try to adjust t yourself and don’t complain, every moment is an experience of a life- time, so just enjoy every moment of it.
  • Select any activities you enjoy like reading listening to music, something which keeps mind happy
  • Do not read in the dim light
  • Drink a cup of warm milk before going to bed
  • If you feel uneasy while sleeping, then change the position or use an easy chair to rest
  • Also try to change your menu as often, this will bring in variety and you will enjoy what you eat

Getting ready for big day
  • There are lots of things to plan when you are closer to deliver your baby.
  • Make a list of important contacts (friends, doctors, clinic etc)
  • Discuss everything with your husband
  • Keep your vehicle ready at all times
  • Set your and the babies  kit like baby  linen, stitched baby clothes, cream,  feeding bottle, spoon and mug to feed  the baby, diapers etc arranged
For mother
  • Creams
  • Toiletries 
  • Front hook clothing and nursing bras
  • Cut and file your nails
  • Trim your long hair and make it manageable

After delivery
Pregnancy is a wonderful way for women to bring out her real glow. Even her hair becomes more beautiful than ever, but it could also be a story of weight gain which makes the skin stretch and cause stretch marks.
Preventing these marks is a lot of work. The secret is moisturizing and more moisturizing. Skin massages is also a remedy during pregnancy.  Massaging with creams or oils like a mixture of equal quantity of olive and almond oil or pure coconut oil is recommended.  Use a soft brush or a hand glove which makes the process more vigorous and effective as it increases circulation.
Application of these oils can be started right from your pregnancy till even after the delivery.  For better effect, apply these oils for over a night and wash it in the morning.
·         For normal skin: Make a paste of gram flour and turmeric powder with few drops of lime juice.
·         For dry skin: Use some fresh milk (instead of lime) to rub you marks. This also helps to lighten stretch marks.

After your delivery continue to eat well. Return to healthy weight gradually and slowly get back to your routine of regular exercise

SARASWATI PUJA on 11th 2013

‘’Saraswati  Pooja’’ is celebrated  for the Goddess Saraswati is a river as well as its personification as a goddess.In the post-vedic age,she began to lose her status as a river goddess became increasingly assosiated with litreature,arts and music etc.
In Hinduism Saraswati is an extremely beautiful women with milky white complexion and normally wears white clothes.She represent intelligence,consciousness ,cosmic 
knowledge,creativity,education,enlightenment,music ,the arts eloquence and power.Hindus worship her not for academic knowledge but for divine knowledge. She is the mother
 of vedas , Saraswati is the daughter of Lord Shiva and Goddess Durga It is believed   that goddess Saraswati  endows human beings with the powers of speech,wisdom and learning.


The Goddess Saraswati sits or stands on a water lily and has four arms. With one of her hand, she is presenting a lotus to her husband Bramha and on the other hand holds a book of palm leaves indicating knowledge. With other two, she is playing a stringed musical instrument called Veena.
Being the Goddess of learning, she is evoked or worshipped when a child is sent to achieve knowledge & education. This day is considered very auspicious for all those who are starting their education or learning of musical instruments and dance.
During Dasara Saraswati puja is very auspicious for beginners.



                                                                                         
  steps of Pooja at home:
Choose the time according to the convenience of all the members of the family.
Time-   Pooja should be performed at home either in the morning hrs before 12 p.m. or after the sunset.
Preparation for the Pooja:
  • Two Diyas
  • Fresh flowers: Jasmine or any other scented flower. One can also use silver flowers, in case you don’t find real flowers. These silver ones can always be washed & reused.
  • Fruits: Arrange five types of fruits or some dry fruits or even sweets any type of sweets that you can either buy from the market or freshly made at home.
  • Haldi & Kumkum
  • Akshata which is prepared with a little rice mixed with Haldi and Kumkum
  • Incense sticks
Aarti Method:
  • Light Diyas.
  • Make sure some scared books like the Bhagvad Gita or any knowledge books are kept
  • Children can also keep their school books and participate in the Pooja. “This used to be the favorite part to my kids, they used to continue to keep their books for 3-4 days and expect the goddess to do their holiday homework and also a getaway from studies”
  • As an offering (naivedya) to the Goddess Saraswati mix banana pulp with milk (raw), honey, sugar and ghee. This mixture is called the Panchamrith”.
  •  Apply Haldi and Kumkum to Goddess Saraswati
  • Put flowers and light Incense sticks
  • Set all the fruits and sweets in front of Goddess
  • After  the Aarti  distribute some Akshata to all the members in the house who are present in this Pooja and chant the above mantra and ask for  the Goddess knowledge and grace.
  • In the end before concluding ask for her forgiveness if any mistake/s was done unknowingly while performing the Puja.
  • Put the Akshata and pray.

Twamaha Prathehe Devi Vidya Dhanam Cha Dehe Me” 

As Goddess Laxmi bestows us with wealth, so does Goddess Saraswati bestows us with knowledge and enlightenment. Wisdom and knowledge are as essential as Wealth. Wealth can be stolen but not Wisdom.

Beauty Tips


Beauty always changes with trends and time. But the two things which have remained static and are considered beautiful for generations is glowing skin and shinny soft hair.

Daily diet never to miss:

  • Yogurt (low fat)
  • Almond x  5
  • Walnut  x 1
  • Eggs thrice a week
Chocolate Face Mask

Result:  Glowing supple skin, tightens skin & diminishes fine lines
Ingredients :
  • 1 cup milk
  • 1 bar dark chocolate
  • 1 tea spoon salt
  • Method :
  • In a double boiler pan, melt chocolate and add milk and salt.
  • When it starts turning into a semi -thick consistency cool it.  
  • Apply over face and neck excluding eyes and mouth area.
  • Keep it for 20-25 minutes and wash with cold water.
Treatment for Dry Hair

  • Apply warm coconut oil and leave it for  2-3 hrs.
  • Before a shower, massage hair with coconut milk for 5 minutes,  followed by shampoo and conditioner.
  • Makes hair shinny and soft.      


Skin whitener
  • Coconut milk
  • Lime juice
  • 1tsp. glycerine,rose water
  • Mix together and apply leave it for 20 minutes.
Skin tightening

         Egg is an excellent for pimples and tightens your skin ,use beaten egg white apply it on your face .

         Leave it for drying and rinse water and pat dry.

Glowing skin
  •                 Carrot juice 2tsp
  •              Tomato juice 2tsp
  •              Make a paste of these and apply on your face.
Face Pack  ( nourishing skin)
  •          2tbs orange peel and lemon peel

  •         Soak them overnight in a hot water.And morning grind it into fine paste and apply on your face and leave it till it dries. And wash with cold water.
CLEANSING CREAM

  •          2tbs.refined flour
  •          mix together and apply on your face, arms ,neck, hands and legs. Rub gently in a circular motion until the dirt comes off.
